Princess Bubblegum was an alternate version of Princess Bubblegum from the original universe. She died off-screen in "Finn The Human", and BMO acted as her in "Jerry".
Fionna, Cake, and Simon were taken by BMO to the remains of the Candy Kingdom. Once in Princess Bubblegum's lab, BMO put on her crown and lab coat and pretended to be her.
This incarnation of Bonnibel was never physically seen, but presumably appeared identical to her original counterpart.
