Mellotoxin is a substance produced by Plantoids. It is deadly to Zanoits, so they kill off hundreds of thousands of Plantoids each year in order to stay alive.

Princess Bubblegum tells Finn about this after he gets jealous of Ricardio dancing with Princess and tries to pretend that he knows science.
