In the episode Graybles 1000+, there was these 'ice thing' that was chasing Cuble. That ice thing was actually not Simon, if you all could have guessed it. Because in the episode Evergreen, Gunther wish that he want to be like Urgence Evergreen when he wears the crown. So whoever wears the crown will share the same characteristics and appearance as Evergreen. There is possibility that Betty will find a cure for Simon, if she ever recovers from being a mad wizard in You Forgot Your Floaties, or someone smart enough to cure him, like Princess Bubblegum.

No that's not the case. When Bella Noche's antic magic saps the ice kings crown of its powers, & Simon brings Betty from the past, he starts to die. Death tells him if he doesn't die naturally then, he will be the ice king till the sun blows up. Simon says he has to let Betty try find a cure. But they are doomed. That's why death says 'you lose Simon.' He knows there is no cure. & Betty has fallen prey to the magic sadness & madness biz. We don't know what happens to her yet but 1000 graybles is a glimpse into the future. The crown has degraded the ice king to that less than human form, as he has kept looking less & less like Simon the longer he's worn it, more than a thousand years. Like death said, he'll be the ice king till the sun blows up; ie. Till the world ends. Tragic but beautifully written.
The truth may varies, there is possibility and impossibility, so let's just hope that Simon and Betty will be reunited.
